I don't think having a ton of jedi running around would altogether be a bad thing so long as character customisation in terms of both looks and actual abilities was handled at a much more in-depth level than, say, Warcraft does.
The difference in being a Jedi or Sith, the difference in what specialisation of jedi you are, etc etc. Whether this will happen or not remains to be seen though. I'm always preferred the idea of a class which has sub-class specialisations to the Warcraft approach, where the closest you come to 'evolving' is with your talents which are fairly loose in nature. Imagine it being like Diablo, where the choice you make isn't as malleable, but allows you greater depth of character
Of course, assuming they're aiming for class balances rather than treating it like Galaxies did with the "hero class" mentality, you should get people playing a wide range with perhaps preference to jedi (A lot like there's a preference to DK's atm, but you still do have other classes).

I'm not hoping for something to crush WoW but I do want something to at least challenge it. A lack of competition in the MMO market isn't a good thing from a consumer perspective. Back when WoW was beginning, it had to fight for where it got to, and as a result content occured more often. It wasn't always perfect (god I remember so many bugs in Vanilla) but it was definitley harder to get bored. And if you got bored anyway, you had options to choose from to take time off from WoW if you still wanted to play an MMO. Now it's WoW or bust.
